Jean-Georges Opens at the New Waldorf Astoria in Beverly Hills

One of the most anticipated restaurant openings this year has landed in Los Angeles. Celebrated French chef Jean-Georges Vongerichten has brought his three Michelin-starred cooking to LA with his new restaurant alongside the opening of the 12-story luxury hotel Waldorf Astoria in Beverly Hills. While he award-winning chef has multiple restaurants from Las Vegas to Japan, this will be his first foray on the West Coast. There will be four dining options at the new Waldorf Astoria maintained by Jean Georges’ culinary team, with the opulent Jean Georges Beverly Hills as the signature restaurant.

The Beverly Hills restaurant from the chef known as one of the best living French chefs will feature French-American cuisine that is approachable and introduces guests to the flavors of Jean-Georges’ restaurants. Naturally, it will focus on organic and locally-sourced ingredients. Unlike the elaborate tasting menus of his signature New York restaurant, the Beverly Hills restaurant will feature a simpler style with something for everyone. About a third of the menu will be vegetarian, drawing on the wealth of fresh produce from California.

The opening menu brings in local California seafood such as Santa Barbara sea urchin served atop black bread crostini, salted butter jalapeno, and yuzu. There is caviar and raw fish sections followed by appetizer of grilled octopus and crunchy potatoes. Entrees will include Santa Barbara meager crusted with nut and seed, and caramelized beef tenderloin with miso mustard. For guests looking for a spin on classic comfort food, pizza of avocado carpaccio or black truffle will be available, along with a grass-fed cheddar cheese burger with miso-Russian dressing.

In addition to the signature fine dining affair, there are three more dining options presented by Jean-Georges and his culinary team at the hotel. Jean-Georges Beverly Hills Bar is a more casual gathering spot for cocktails and shared plates. The art deco Lobby Lounge will have breakfast offerings and cocktails all day. The Rooftop by JG is accessible only for hotel guests and offers and offers a casual space that overlooks the hotel pool and the city of Beverly Hills.

Jean Georges Beverly Hills will be open for breakfast, lunch, and dinner seven days a week.
